Carboxymethylcellulose sodium (also known as sodium carboxymethyl cellulose or CMC) is an anionic water-soluble polymer made from naturally occurring cellulose via etherification, which replaces the hydroxyl groups on the cellulose chain with carboxymethyl groups.Sodium carboxymethyl cellulose, or CMC, is easily dissolved in both hot and cold water and has a variety of chemical and physical characteristics.

In foods,Carboxymethylcellulose sodium is used in food science as a viscosity modifier or thickener, and to stabilize emulsions in various products including ice cream.Also can be used in Personal lubricants, toothpaste, laxatives, diet pills, water-based paints, detergents, textile sizing, and various paper products,because it has high viscosity, is nontoxic, and is generally considered to be hypoallergenic as the major source fiber is either softwood pulp or cotton linter.
