Benzoic acid (CAS No. 65-85-0) is an important aromatic carboxylic acid with diverse industrial and consumer applications. Its molecular formula is C₇H₆O₂, molar mass 122.12 g/mol, and the benzene ring is directly connected to a carboxyl group in its structure, endowing it with weak acidity (pKa 4.2). At room temperature, it appears as white needle-shaped or flaky crystals with a faint benzoin-like odor. The compound has a density of 1.2659 g/cm³ at 15°C, melting point of 122.4°C, boiling point of 249°C, and exhibits sublimation above 100°C. It is sparingly soluble in cold water but dissolves readily in organic solvents such as ethanol, ether, and chloroform, with significantly increased solubility in hot water. |

Uses
In food and beverage preservation, benzoic acid and its sodium salt (sodium benzoate) act as antimicrobial agents to inhibit the metabolic activities of molds, yeasts, and bacteria, thereby extending product shelf life. Their efficacy is optimal at pH 2.5–4.0, making them suitable for acidic foods and beverages like juices, carbonated drinks, and pickles.
Within pharmaceutical and cosmetic industries, benzoic acid functions as a preservative in topical creams, lotions, and oral care products. Derivatives such as benzyl benzoate are used in scabies treatment, while formulations containing benzoic acid and salicylic acid address fungal infections.
Safety Information
Benzoic acid is irritating to the skin and respiratory tract, and long-term exposure may cause allergic reactions. Its acute toxicity is low (rat oral LD₅₀ 1700 mg/kg), but excessive intake may cause gastrointestinal discomfort. Protective equipment should be worn during operation to avoid dust inhalation or skin contact.
It is slightly harmful to aquatic organisms (WGK 1) and should be avoided from direct discharge into water bodies. When coexisting with vitamin C under acidic conditions, the carcinogen benzene may be generated, especially in plastic packaging and high-temperature storage environments, where the risk increases. Therefore, the food industry needs to strictly control the coordinated use of the two.
