Monoethyl fumarate can be used to prepare photo-crosslinkable macromonomers and to synthesize Ugi/intramolecular Diels-Alder (IMDA) cycloaddition products. It is also an excellent preservative and a polymerizer for polymer materials. It serves as a replacement product for food additives such as fumaric acid and its dimethyl ester. Additionally, it can be used as a feed and food additive.
