Uses
Food industry: 2-Acetylthiazole is used to blend cereals, popcorn, bread, and meat flavors. The recommended dosage is about 0.2 - 1.4 mg/kg in the final flavored food.
Chemical industry: 2-Acetylthiazole is used to prepare triazolothiazoles, and chiral alcohols, and participate in aldol polycondensation reactions. It is also the equivalent of α-hydroxy propionaldehyde β-anion.
