Molecular Structure
Gamma-cyclodextrin is a cyclic molecule composed of eight glucose units linked by α-1,4 bonds. Its ring structure resembles that of a doughnut, and the internal polarity is lower than that of the external side.
Source
Natural source: Produced by the degradation of starch by glucosyltransferase (CGTase), gamma-cyclodextrin can occur naturally in bacteria.
Synthetic source: Gamma-cyclodextrin can be artificially synthesized.
Properties
Hydrophobic Cavity and Hydrophilic Outer Surface: The ring structure of gamma-cyclodextrin provides a hydrophobic cavity that can form inclusion complexes with nonpolar organic molecules of appropriate size. The hydrophobic outer surface makes gamma-cyclodextrin water-soluble, which is the basis for its application in the food industry.
Maximum Cavity Size: Among natural cyclodextrins, gamma-cyclodextrin has the largest cavity size, suitable for accommodating larger biomolecules and other substances. It is often used as a complexing agent and is widely applied in medicine, pharmacy, food, cosmetics, textiles, and other industries.
Safety: Gamma-cyclodextrin can be tolerated by the human body at a certain concentration without causing gastrointestinal discomfort symptoms. It is regarded as generally safe by the FDA. Gamma-cyclodextrin is a hydrophilic molecule that is not easily permeable to biological membranes. It can be rapidly digested by bacteria in the gastrointestinal tract and metabolized by α-amylase in the human body.
